Perched sky-high on the top floor of Tower One of Marina Bay Sands, LAVO just got a major glow-up, transforming into the kind of rooftop escape that makes one daydream of livin’ la dolce vita.

Its new interiors evoke the feeling of being in the sun-bleached cliffside towns of coastal Italy, with warm honey-hued accents, handcrafted tiled surfaces, and cosy, vintage-inspired furniture and upholstery that make every corner feel effortlessly chic. Add in golden-hour sunrays, pops of citrus-tones and actual citruses (the place is accented with real lemon trees), and you’ve basically got a postcard-perfect backdrop that beckons every guest to stop, drop and selfie.

A Menu That Celebrates the Italian Coast

The refreshed menu at LAVO, whipped up by Tao Group Hospitality’s culinary squad under the fastidious eye of chief culinary officer Ralph Scamardella, delivers major Italian summer energy. While signatures like The Meatball – a whopper made up of wagyu beef and Italian pork sausage, and accompanied by freshly whipped ricotta – remain, light and zesty, seafood-forward dishes are now the focus.

The Jumbo Shrimp Alla Scampi, for example, features an addictive blend of garlic and lemon butter while every one of the pasta dishes is a must-try. Our reccos: the Diavola seafood pasta, which comes with lobster, squid and prawns spiked with a cheeky kick of brandy and chilli, and the Mafaldine Seafood Alfredo that’s stacked with shrimp and scallops and steeped in comforting, buttery lobster cream.

The speciality mains are similarly simple yet comforting, all meant to let the natural flavours of the ocean shine through. Take the punchy Chilean seabass puttanesca, for example, or the Grilled Branzino, which is paired with parsley, fennel and a lively vinaigrette made from Sorrento lemons. If you thought LAVO is simply a see-and-be-seen sort of joint, these culinary creations prove it’s got the substance to rival any serious restaurant.

Time to raise a glass because, like the food menu, the artisanal drinks at LAVO are playful, bold and inventive. Curated to complement the food, each cocktail is meant to transport one on a sunsoaked Italian vacay.

Highlights include the Amalfi Breeze – a tropical bliss with coconut liqueur, pineapple, lime, gin, prosecco, and orange bitters – and the crisp, fragrant and gently spiced From Sicily with Love, which is pleasantly crafted with basil-infused Grey Goose Vodka, drambuie, lemongrass, ginger ale and Peychaud bitters. There are also reimagined classics such as the Negroni Sbagliato and Capri Martini, while mocktails like La Dolce Vita (lychee, pineapple, red dragonfruit) keep the mood zero-guilt, but totally glam.
