One Of Seoul's Top Chefs Takes Over The Mondrian Singapore Duxton For A Month

If you missed the four-hands dinner with one of Seoul's hottest chefs, Choi Hyun-seok of the famed Choi Dot, during the Seoul Of The Party event at the Mondrian Singapore Duxton last weekend, here’s a news flash. Until August 17, Chef Choi has curated a menu for Christina’s, the stylish restaurant at the hotel known for its Asian- and Mediterranean-influenced dishes cooked over fire.

It’s an apt spot for Chef Choi’s cuisine, which is inspired by Italy but Korean in essence, featuring flavour bombs like butter tinged with aged doenjang. For the pop-up menu at Mondrian Singapore Duxton, Choi has included three of his favourite dishes: cold capellini with abalone and perilla oil, crispy fried eggplant with sweet and spicy Eo-hyang mayo, and burrata with yuzu.

The menu also includes specially created cocktails made with Khee Soju, the brand started by former fashion designer Korean-American Eva Chow, affectionately dubbed by the press as Los Angeles' "culture queen." These include Soju Bomb ver. 2, a concoction of spiced hibiscus tea, calamansi, lemon, and Peroni – the perfect tipple to beat the heat.
