May’s new cafes and restaurants in Singapore are giving us plenty to work with: Korean-style bakes, Shanghainese pan-fried buns, freshly made onigiri, stone-milled matcha, late-night grills, and a brewery big enough for the whole group chat. Here are the best new cafes and restaurants to check out in May 2026.

SINGAPORE’S BEST NEW CAFES AND RESTAURANTS IN MAY 2026

1. Onigiri Gon

This new counter-style shop at Fortune Centre is doing onigiri properly: shaped by hand, made to order, and run by a Fukuoka native – far from the regular takeaway onigiri you get from 7-Eleven. 

There are around 20 onigiri options. The simpler fillings sit at $4.90 – ume (Japanese plum), konbu (kelp), okaka (bonito flakes with soy sauce), and nori tsukudani (simmered seaweed) – while the richer end of the menu runs to ikura (salmon roe, $10.90), otoro (fatty tuna, $12.90), and wagyu sukiyaki ($12.90). The lunch set is the easiest order, offering two onigiri, soup, and pickles, starting from a reasonable $13.90. 

What We Recommend: Eat there – you can’t take away onigiri with raw fillings.

2. Lady M

Lady M is back after closing all local outlets earlier this year, starting with a new boutique at Jewel Changi Airport. It’s not a new discovery by any means, but the return comes with two more outlets expected by end-June at IOI Central Boulevard Towers and Marina Bay Link Mall.

The signature mille crepes start from $11.80 a slice, with familiar flavours like green tea, chocolate, and pistachio. There’s also the new Strawberry Blossom ($13.50), layered with strawberry cream and topped with fresh strawberries. Newer non-crepe options include Taro Mochi Cream Cake ($13.50), with taro cream, sponge cake, and vanilla mochi, plus crepe biscuits ($22)  

What We Recommend: Get the cake set with a friend – two slices and two drinks for $35.80 makes for an easy catch-up.

3. Noci Bakehouse

Noci Bakehouse

Suntec’s newest cafe-bakery comes from the same folks behind Noci Pasta Bar, swapping pasta queues for trays of Korean-style bakes. The space is warm and wood-accented, with enough seats to have a proper sit-down over coffee and a few pastries.

Start with the bakes: butter tteok ($2.50 each), made with glutinous rice and tapioca for a crisp outside and chewy middle, crispy salt bread ($4.40), spring onion cream cheese bagel ($7), and Dubai chocolate danish ($12). The all-day brunch menu goes beyond the pastry counter, with savoury plates like the Cottage Beef Hot Sandwich ($14.50) for a fuller stop – it comes chock-full with slices of beef, smoked ham, and bacon. 

What We Recommend: Come before the lunch crowd hits – the salt breads and butter tteok are the ones that’ll most likely vanish first.

4. People People Brewing Co.

People People Brewing Co.

People People Brewing Co. brings fresh beer and big-group dining to Weave at Resorts World Sentosa, backed by the Burnt Ends folks. At 9,000 square feet, it’s not exactly a cosy little taproom – more on-site brewing, wood-fired food, live music, and plenty of room for big groups and long meals. 

The beer is brewed in-house and served tank-to-tap from five massive 1,500-litre tanks, with lagers, modern IPAs, fruited sours, and barrel-aged stouts in the mix. The menu is built for sharing, with wood-fired sourdough pizzas (from $24), rotisserie chicken (from $16), and plenty of burgers and bar bites.  

What We Recommend: Book the craft beer workshop on Saturdays if you want the brewery bit explained – it covers beer styles, brewing techniques, and tasting – rather than simply downing a pint.

5. Asin

Ace Tan

Chef Ace Tan, best known for the now-defunct Asu, returns with progressive Asian concept Asin – pronounced “Ace-in”, naturally. He’s joined by Desmond Heng of Suguru, which hints at premium seafood sourcing and a fairly serious ingredient list. Tan is still working with Asian flavours, ferments, ageing techniques – you won’t find your straightforward local fare here. 

The eight-course seasonal tasting menu is priced at $188, with the opening summer menu featuring dishes like an “oyster omelette” sphere inspired by orh luak, and spiny sea cucumber stuffed with scallops. 

What We Recommend: Book early if you’re curious – with Ace Tan in the kitchen, this will definitely pull a crowd.

There’s a new sandwich shop at The Odeon Katong, run by three friends and kept fairly tight: sandwiches, sides, and coffee. It’s self-service with no GST or service charge, though the sandwiches are still very much in the $20-and-up zone. 

The namesake Cold Cut Trio ($24) comes with seasonal cold cuts, brie, hot honey, and arugula, while the Krabby Tartine ($25) pairs crab and avocado with a housemade mango hot sauce. Despite its name, Just A Grilled Cheese Sandwich ($22) is a hefty toastie that’s served with tomato soup. Make sure to add on the Thundercrunch Fries ($8) – they’re beautifully crisp outside, fluffy inside, and served with yuzu kosho mayo. 

What We Recommend: Pick based on the sauce: hot honey for the Cold Cut Trio, nori mustard for the Pastrami, and mango hot sauce for the Krabby Tartine.

7. Matsu Matcha

Matsu Matcha has moved from online orders to a proper matcha counter at Guoco Tower, giving the CBD one more place to get matcha – this time with slightly more ceremony. The showstopper is the Kyoto-made stone mill, which grinds leaves into matcha powder on-site at a deeply unhurried 40g an hour. Slow, yes, but it gives a finer, fresher powder with better aroma. 

As an upgrade from the standard matcha latte, try the Stone Milled Ryokuun Matcha Latte ($8.90). The Seiha Matcha Latte ($9.90) is grassier, with milk keeping things from getting too severe. There are also houjicha and genmaicha options. 

What We Recommend: Get the Double Matcha ($12.50) – an iced Uji matcha latte topped with Sweet Cheeks gelato made with tencha, the tea leaf that gets ground into matcha.

8. Yang’s Dumplings

Yang’s Dumplings

Popular dumpling chain Yang’s Dumpling is bringing its famed sheng jian bao (pan-fried pork buns) to Bugis Junction. This Shanghai brand started as a humble stall along Wujiang Road back in 1994 – since then, it’s grown into one of China’s best-known names for pan-fried buns. 

The sheng jian bao is the main order, obviously. It’s not xiao long bao (soup-filled dumplings), although there is still hot pork broth involved, along with a crisp base and soft top. The menu also includes wontons, noodles, soups, and other Shanghainese comfort dishes. 

What We Recommend: Eat them fast – the crisp base softens and the soup congeals if it sits around too long.

9. The Margin

This Muslim-owned restaurant on Hamilton Road is by the same people behind Asian smokehouse Cherry & Oak and biryani joint Cilantro. This particular venture goes all in on its Wall Street theme, with stock tickers, market screens, and rather fittingly, a trading school of sorts upstairs – it’s a lot, but the food isn’t just a side note. 

With its South American-influenced menu, you can expect lots of meat, seafood, and big-ticket mains. There are grilled queen scallops ($5 each), beef short ribs ($55), and a claypot “paella” with wagyu and foie gras ($55), which takes on the familiar comfort and texture of claypot rice. 

What We Recommend: Save it for a late dinner – it closes at 2am from Thursdays to Saturdays, quite a rarity for a full-service restaurant.

10. Mozmoji

Mozmoji

Mozmoji – or Moji, from its Chinese name 陌迹 – is easy to miss, sitting on the second floor of a shophouse along South Bridge Road. It’s part cafe, part ceramics gallery, with the space running across the whole floor and mezzanine. There’s lots of natural light, wooden furniture, and shelves of handmade cups, plates, cutlery, and artist pieces carefully curated by the owner.

The cafe menu is still simple for now, with a focus on specialty coffee and desserts like matcha strawberry cake and matcha mousse. Drinks include the Salted Cocoa Latte, Snowtop Latte, and Vienna-style options in matcha, hojicha, pistachio, and black sesame. 

What We Recommend: Pick your cup before you order – you can choose your own ceramic drinkware if you’re having coffee in, which is an undeniably charming part of the whole ritual.
